Zucchini Carrot Pancakes
One of my ‘sneaky-mom’ recipes that allows you to sneak in some veggies into your kidlets diet. Super yummy and nutritious. I use to give this to my little babes to play with, num-num on and now my toddlers eat these for breakfast, lunch, and cold as a snack-on-the-go.
1 – 1/2 cups grated zucchini- 2 tbsp grated onion
- 1/2 cup grated carrot
- 1/4 cup parmesan cheese
- 1/4 flour
- 2 eggs
- 2 tbsp mayo
- 1/4 tsp oregano or dill
Mix together and drop in a hot frying pan using some butter and/or olive oil.
