Roast Beets with Dill-Yogurt Drizzle
Go ahead. Get messy. Offer beets in many ways! Here is one recipe that is easy, nutritious and delicious.

- Trim greens from 4 medium beets.
- Wrap each beet tightly in foil.
- Place on baking sheet.
- Roast in a preheated 400 ℉ oven for about 45 mins.
Once baked:
- Open foil packets and let cool 10 mins.
- Slip off peel of beet – should be able to pull off beet.
- Slice beets and transfer to a plate or platter.
To make Dill-Yogurt Drizzle:
- 1/4 cup plain yogurt
- 1 Tbsp finely chopped dill
- 1/2 tsp honey
- 1/2 tsp lemon zest
- Dash of salt
- Whisk in a medium bowl
Drizzle dressing over warm beets right before serving.
