Asparagus Basil Salad
Participation promotes ownership and ownership promotes effort. Effort is the key to get the kids to eat at least 2 tiny tomatoes and 1 asparagus spear into their bellies. This little salad is delicious, healthy, easy to prepare and involve the kids in the process!
One of my daily goals is to present vegetables in a tasty way so my kids cannot help themselves but eat them with pleasure. Some days I am more successful than others. This little salad is so simple to whip up and is one of the vegetable dishes that I have had a little success with. To be honest, I think it is because I can include my kidlets in the making of the salad. Participation promotes ownership and ownership promotes effort. I have my kids:
- wash the veggies and gently tap dry
- snap the asapargus in half
- pick the basil leaves from the basil pot in our back yard
- tear up the basil leaves into smaller pieces
- cut the peeled avocado (with a dull kids play knife) – won’t be the prettiest cubes but oh, well!
- stir the dressing
- pour the dressing over veggies
How can they not try a little of the salad after that involvement

- 1 lb asparagus, trimmed and halved
- 1 cup grape or cherry tomatoes, halved
- 1 ripe avocado, cut into cubes
- 1 cup sliced (or torn) fresh basil leaves
- 1/4 cup olive oil
- 2 teaspoons lemon juice
- 2 teaspoons dijon mustards
- 1/2 teaspoon sea salt
- 1/2 teaspoon cracked pepper
- Steam asparagus for 5-7 minutes until fork tender
- Place asparagus, tomatoes, avocado and basil into a large bowl
- Stir together olive oil, lemon juice, mustard
- Pour dressing over salad and toss
- Sprinkle with salt and pepper
